• Historical Irish Dairy Products

The story of the evolution of Irish dairying is inextricably linked with continuous innovation in technologies. This book presents a chronological perspective of the evolution of dairy products in Ireland. It draws together information spread across a diverse range of historical, archaeological, economic and scientific publications and it aims to provide a platform that may be used in reviewing the current state of knowledge, and identifying notable gaps pertaining to the development of dairy products from prehistory, through the medieval period, and on into recent centuries.

The authors hope that this compilation could facilitate the development of a nationally co-ordinated strategic research programme on indigenous dairy products. A particular strength of the book lies in the clear and accessible manner in which the authors have documented these changing technologies, from the earliest times to the present day.


Dara Downey Ph.D, lectures in English at TCD. She was awarded an Irish Research Council Post-Doctoral Fellowship in 2010, leading to the publication of her first monograph in 2014. She is the editor of an online scholarly journal, and co-editor of a book entitled Landscapes of liminality: between space and place (2016).

Liam Downey Ph.D, D.Sc., was Director of Teagasc from 1994 to 2001, and is Adjunct Professor of Archaeology at UCD and of Biology at Maynooth University. He is the author of many scientific papers and writes also on the archaeology and history of farming in Ireland. He also co-authored the best-selling Antiquites of Rural Ireland (Wordwell 2017)

Derry O’Donovan, is a retired Senior Business Adviser at AIB Bank, where he held senior agri-management positions in retail and corporate banking. He is a graduate of UCC and UCD and is a former president of the Agricultural Science Association. He is the author of Ballinspittle and De Courcey Country: historical landscapes (2003), a best-selling book on his native place.
